Our olives are hand-picked from old-growth trees — some over a century old — thriving without synthetic chemicals or artificial irrigation. Harvested early for maximum freshness and naturally low acidity, the fruit is pressed within hours, preserving its vibrant aroma, rich polyphenols, and distinctive peppery finish.
This is a single-estate, unfiltered, cold-pressed oil made with traditional methods, respecting the rhythm of the land and the heritage passed through generations of our family.
